A Sweetheart of a Peach Cobbler Recipe

It doesn’t matter what time of year it is—it’s always time for peach cobbler.
This recipe comes from my family’s cookbook. Jessie worked for my grandmother and for my great-aunt when she was bedridden, and she shared this recipe with us years ago. Let me tell you—it’s bubbly, sweet, and buttery in all the right ways.
Jessie had the sweetest smile and the gentlest disposition, and peach cobbler has always made me think of her. Some people just become part of a family that way.
This is an easy recipe to throw together at the last minute. It’s also the perfect thing to take to someone who needs to know they’re not forgotten.
In the Sweetheart, Texas series, The Sweet Spot is a gathering place—a diner where the community comes together for breakfast and coffee, and on Friday and Saturday nights—barbecue. And nothing goes better with barbecue than peach cobbler. It’s about as Texas as it gets.

Ingredients
¾ stick butter
¾ cup sugar
¾ cup flour
1 large can peaches or 1 quart frozen peaches
1 teaspoon vanilla
2½ teaspoons baking powder
½ cup milk
½ teaspoon salt
Instructions
Preheat oven to 350°F.
Melt butter in an 8×8-inch baking dish.
Mix batter and pour it over the melted butter.
Spoon fruit and juice evenly over the batter.
Bake until golden brown on top, about 30 minutes.
Serve hot and bubbly. Add a scoop of Blue Bell vanilla ice cream—and don’t be shy about sneaking an extra serving after it’s chilled in the fridge. It’s delicious any way you eat it.
You can easily double this recipe in a 9×13 pan, and you can substitute any favorite fruit.
